If you have done your stock, you should have a pound of chicken off the bone. Save this until last. Cut into bite-sized pieces cured ham and Cajun sausage (tastes range, but the middle ground is something like a Portuguese sausage). Assuming you have a gallon of broth, chop coarsely two medium onions, a fistful of parsley, several ribs of celery, three fat and ripe tomatoes (or one can), two green peppers and a pound (up to two pounds if you like) of sliced okra. A mashed clove of garlic or two is optional.

Now get your stock ready.  Get it to a roiling boil, and one by one add the vegetables in order of your preference. Once the stock is boiling again, turn the heat down to simmer and do just that for five or ten minutes.

Have half a cup of Cajun roux ready in a skillet and heat it up. Add ladle fulls of broth one at a time, being sure to stir in each ladle of liquid so there is no separation. When the 'gravy' has a consistency of heavy cream, you may then pour it slowly back into the gumbo pot, stirring all the while. Add the meats and let simmer for five minutes. Ladle over cooked white rice (ratio it at 5 parts gumbo to 1 part rice). Serve with file powder. Finally, a word about file powder: if it contains any sort of herb other than pure dried sassafras root, it is NOT file powder. It will therefore not taste like file powder and the gumbo will not be able to be called a proper 'file gumbo.' That's just something to consider. And by all means, use Louisiana hot sauce at your discretion.

My favorite is Tabasco.

Here's a my favorite yummy dessert:

Cashew Banana Cream Pie

Ingredients 

Crust 

1 cup chopped unsalted cashew nuts 

1/2 cup flaked unsweetened coconut 

2 tablespoons light brown sugar 

1 egg white 



Custard Filling

3 egg yolks 

5 teaspoons cornstarch 

3/4 cup granulated sugar 

1-1/2 cups milk 

1/4 teaspoon salt 

1 tablespoon unsalted butter, at room temperature 

1 teaspoon vanilla extract 



1/2 cup heavy or whipping cream 

2 bananas 

1/2 cup finely chopped cashew nuts

Instructions

Preheat the oven to 375 degrees F.

Prepare the crust: Combine the nuts, coconut, and brown sugar in a medium-size bowl.
Beat the egg white until stiff, and gently fold it into the nut mixture.
Press the mixture evenly into an 8-inch pie plate, making sure the sides are thickish (the crust will shrink while baking). Bake until the crust is lightly browned, 7 minutes.

Remove the pie plate from the oven and let it cool on a rack. (The crust will tighten as it cools.)
Prepare the custard: Beat the egg yolks in a heavy medium-size saucepan. Add the cornstarch and sugar, and mix well. Then stir in the milk, salt, and butter.

Cook the egg mixture over medium heat, stirring constantly, until it is bubbling and thick, 5 to 7 minutes.
Remove the pan from the heat and stir in the vanilla. Transfer the mixture to a glass bowl, cover it with plastic wrap, and refrigerate for 2 to 4 hours.

Whip the cream with an electric mixer until it forms stiff peaks. Fold the whipped cream into the chilled custard.
Peel and slice 1 of the bananas, and arrange it evenly on the bottom of the reserved crust. Spoon the filling into the crust, cover with plastic wrap, and chill for another 2 hours.
When you are ready to serve the pie, sprinkle the chopped nuts evenly over the top. Then peel and slice the remaining banana, and arrange the slices in a circle on top of the pie, with a few slices placed decoratively in the center.

Serve immediately.

I make delicious brownies - big, moist and monster sized.  Here's my favorite recipe.  Once you've tasted my brownies, you'll beg for more. 

* 1/2 cup coarsely chopped unsalted raw cashew nuts
* 1 cup margerine/butter
* 1 teaspoon vanilla
* 1/4 cup cocoa
* 2 cups granulated sugar
* 3 eggs
* 1 cup all-purpose flour
* 1/4 teaspoon baking powder

Directions: Preheat your oven to 350 degrees Farenheit. Melt the margerine/butter in a saucepan over medium heat, then add cocoa and mix well. Add sugar and stir until sugar is dissolved and blended then transfer to a bowl. Add eggs, one at a time and, with an electric mixer, beat well after each addition. Beat in flour, baking powder, and vanilla. Fold in cashew nuts and pour into a lightly oiled or sprayed 7 1/2- by 11 3/4 -inch baking dish. Bake until toothpick comes out clean when tested in the center, 40 to 45 minutes.

Finally remove from oven and let the brownies stand on rack for about 10 minutes; then cut into 2-inch squares. Remove from pan while warm and place on a rack to cool. It's not a good idea to leave these in the pan. If your looking to store these for several days, you should wrap in foil.

Makes about 15 squares No need to use a mix when you can make these delicious, light, chewy brownies just about as fast. They are delicious served warm or at room temperature. Cocoa packs a lot of chocolate flavor, but has less fat than solid chocolate. For a fancier dessert, serve with warm caramel sauce and vanilla ice cream.

SOUTHERN CHICKEN AND DUMPLINGS

I'm part Italian and love the heat of the kitchen.  All I need in life is a man who loves my tasty meals.

My favorite is Homemade Deep Dish Italian Lasagna, made with homemade sauce, and filled with ricotta cheese, Italian sausage, and lots of cheese. I serve it with crusty Italian bread, using my grandmother's Old World recipe.

1. Brown bacon and onion in a large pan over medium heat. Stir in fennel seed, 1 teaspoon oregano, Italian seasoning, and tomato sauce. Cover, and simmer on low for 4 to 6 hours, or until thick.
2. Brown sausage links in a large skillet. Drain on paper towels. Cut into 1 inch pieces.
3. Mix together ricotta cheese, egg, milk, parsley, and 1 teaspoon oregano in a medium bowl.
4. Layer 1 cup of sauce on the bottom of a 9 x 13 inch pan. Layer with 1/3 uncooked lasagna noodles, 1/2 ricotta cheese mixture, 1/2 sausage pieces, 1/3 mozzarella, and 1/2 provolone cheese. Top with 1/3 sauce. Repeat layers. Top with remaining 1/3 noodles. Spread remaining sauce over the top, and sprinkle with remaining 1/3 mozzarella cheese.
5. Bake at 350 degrees F (175 degrees C) for 1 1/2 hours.

2. When the lobsters have cooled enough to handle, cut each one in half lengthwise. Remove the lobster meat from the shell and claws, keeping it and the shell intact. Discard the tomalley if desired. Slice each tail piece into 4 medallions and set aside.
3. Continue to simmer the wine and vegetables in the skillet until the liquid has been reduced by half, about 10 minutes. Return the shells to the sauce and stir in the brandy. Simmer for 5 minutes. Strain the stock through a sieve or mesh strainer into a saucepan. Stir in the heavy cream and cook over medium heat until thickened, about 10 minutes. Stir in the butter just until melted. Add the lobster meat to the sauce and cook over low heat until heated through...
